Heavenly Almond Bites

Everyone deserves a little slice of heaven now and then. Try these and see if they satisfy. I like to make a double batch and freeze. That way we and get a few hour for lunches or an afternoon treat.

1 cup large pitted dates, soaked in water for 30 minutes

3 tablespoon almond meal

2 heaping tablespoon almond butter

3 tablespoon shredded organic coconut (unsweetened)

1 tablespoon water (as needed)

1 tablespoon ground flax seed

1/2 teaspoon vanilla extract

pinch of salt

pinch of cinnamon

Toppings!

cacao nibs (optional)

Ground peanuts (optional)

shredded coconut (optional)

raw cocoa powder (optional)

  1. Drain and blend the dates in a food processor.

  2. Next the almond meal and combine.

  3. Place date/almond paste in a bowl and add remaining ingredients and mix by hand.

  4. Chill in the refrigerator (about 10-20 minutes).

  5. Roll dough into “smaller than a golf ball size” balls .

  6. Then roll in optional toppings (cacao powder, nibs, nuts or coconut)

  7. Store in refrigerator

  8. Make a double batch, freeze for later and grab a few for lunch.
