1 tbsp avocado or high quality olive oil
1 small yellow onion
1 red bell pepper
16oz ground turkey, chicken, or pork
1.5 cups of shredded cheese of your choice
6 eggs
1.5 cups of almond flour
0.5 cups of coconut flour
1 tsp salt
1.2 tsp pepper
2 tsp baking powder
Diced both the yellow onion and bell pepper.
To a pan heated at medium heat, add oil, followed by diced onions and bell pepper.
Saute for 5 minutes and add meat of choice. Cook thoroughly until the meat is fully cooked. Set aside to cool.
In a large bowl, whisk eggs, add cooled meat mixture, almond flour, coconut flour, baking powder, and spices.
After mixing thoroughly, add 1 cup of cheese and mix again.
To a large greased baking sheet (or parchment paper lined), scoop and place 12 biscuits. Flatten slightly and top the rest with the shredded cheese.
Cook at 400ºF for 10-12 minutes or until cheese is melted and slightly browned.
